Broiled Fruit Pork Chops

Makes 6 servings

6 well-trimmed boneless pork chops, 4 oz. each, ½ inch thick

1 can (8 oz.) pineapple slices in juice, drained (reserve 1 cup of juice)

1 can (16 oz.) apricot halves in juice drained

¼ cup apricot preserves

2 teaspoons of Dijon mustard

2 teaspoons cider vinegar

Step One: Arrange pork chops on rack in broiler pan, cut pineapple slices in half. Arrange pineapple and apricots evenly around chops. Set aside. In one quart sauce pan, combine preserves, mustard and vinegar. Cook over low heat for five to eight minutes, or until preserves are melted, stirring occasionally.

Museum News

It’s been a busy spring here at the museum. We’ve had many school children visit in recent weeks as well as our regular visitors. It’s interesting to see how people find us and I discovered that Trip Advisor is a common denominator. Word of mouth also is very valuable. On that note, I want to make a plea to members of our community who are NOT members of the museum. We need your support. We keep our doors open, for the most part, in two ways – membership money and profits from our annual fundraiser. We do not receive any money from the state or federal government.

Letter to the Editor

Dear Editor,

I want to thank PISD Superintendent Judy Pollan, Assistant Superintendent Beth Anne Dunavant, High School Principal Jonathan Hill, all of the faculty and especially the staff who worked so hard to make the 2016 Pittsburg Hill School graduation so special. Because of the weather, two separate graduations had to be setup without knowing where the actual ceremony would be held. These staff members are to be commended. Also, thanks to all who organized and spoke at the Baccalaureate Service on May 25.

Around the City of Pittsburg

Your Pittsburg Police Department adopted the motto of “Our Community Our Commitment” seven years ago. We deal with quality of life issues. This raises questions from our citizens at times as to how aspects of enforcement affect their quality of life. A good example here would be traffic enforcement. Laws are designed not to tell you what you can do but what you can’t do. Numerous studies have shown that speed is the leading contributor to motor vehicle crashes. How could the police enforcing traffic laws affect my quality of life? I mean, the other driver is speeding, why should I be concerned?

You’re fired

I have watched a lot of bad television in my lifetime. “The Apprentice” would fit right in the middle of the worst of it. The concept was terrible, the stars were out of their element and Donald Trump acted like a buffoon. Ronald Reagan starred in “B” type movies (would have gone straight to video, if video had been invented) and his career was pretty much a joke. That might be the key. If you can`t act maybe you can be a good president. Reagan would prove that theory out (well, not really proof, just coincidence). Maybe Trump is destined to be the next great president, you know we are due one. Of course Hillary Clinton is a pretty good actress too. Her friends and enemies continue to die around her and she has no clue why. She is un-godly rich and is just an accident too? Hopefully, come January, Trump will be sworn in as president and tell Hillary she is fired from the podium.

Texas Lawman: Frank Augustus Hamer,Texas Ranger, Part 2

During his career as a lawman, Frank Augustus Hamer was involved in at least 50 gun fights. Tall and range tough his no-nonsense demeanor earned Hamer a reputation among the bad men of the day as a lawman to avoid. Many who knew him said he was the epitome of, “one riot, one Ranger.” He once broke up a potential riot and gang fight by walking up to one group and saying, “Git!” They went. He turned to the other group and said, “Back off!” And they did. He became a Texas Ranger in Apr. 1906, he was assigned to Captain J. H. Rogers’ Company C, patrolling the border in south Texas.
