Food for Thought: Down Home, Out of Sight Recipes
Hi all, I am Kay Green Smith and I want to invite you all to join me in sharing recipes. I have accumulated recipes from all over the world the last 40 years and I would like to share some of the best with you. So let’s have a conversation about my favorite topic: Food!
I have worked in the nonprofit world my entire career but as a side hobby I have a serious passion for cooking. For many years I was part of a luncheon club of ladies who experimented with all kinds of recipes. We hosted dinner parties, luncheons, birthday parties and shared holidays to try out new, trendy recipes (we’ll not mention all of those).
There is no mistaking me for Rachael Ray or Emeril Lagasse, but I hope to bring you some interesting recipes that you can enjoy this fall.
The first recipe I’d like to share with you is Macaroni and Cheese. My daughter stumbled upon this recipe shortly after college when this was all she had in her fridge. It turned out so well she gets requests for it now!
Macaroni and Cheese
¼ cup milk
4 oz heavy whipping cream
8 oz shredded Mozzarella
8 oz shredded Cheddar
2 oz shredded Monterey Jack
2 oz cream cheese
8 oz bag of pasta, you can use elbow or any kind of curly pasta so it scoops up all the creamy cheese
Sundried tomatoes
Chopped green onion
Cook pasta according to package instructions and drain. In another sauce pan heat milk and cream and add the shredded cheeses. Keep the heat low and stir until the cheeses have melted. Pour over pasta and sundried tomatoes. Stir. Sprinkle green onion on top and serve. Serves six as a side dish or three hungry teenagers.
